Kalyana Kadamba Sambar | TamBrahm Marriage Style Mixed Vegetable Sambar | Gluten Free and Vegan Recipe

Kadamba Sambar

Hi Supermoms,

Today I am going share about the food served in our Traditional marriage functions. The colourful and tasty array of foods  served in a banana leaf fills our heart and tummy with joy . Most of the Tamil marriages happen between 6 am and 12 pm. The highlight of the marriage is this traditional Thali served in a banana leaf and the organisers work over time to ensure guests enjoy the meal and go back satisfied, with positive feedbacks.

To win the appreciation of the guests, a minimum of 15-20 dishes are served in an order starting from sweet, pachadis and ending with curd rice and buttermilk.

Kalyana Kadamba Sambar

Preparation time : 10 minutes
Cooking time : 35-40 minutes
Serves : 4-6
1 cup = 250 ml cup

Important Note : Suggested vegetables
2 small brinjals ( halved),
1 drumstick ( cut into 1 inch pieces) ,
1 small carrot ( peeled and cubed) ,
4-5 lima beans( cut into 1 inch pieces) ,
100 gmwhite pumpkin ( peeled and cubed) ,
yellow pumpkin ( optional) ,
1- 2 green chillies ( slit vertically into half)
1 tomato ( optional , finely chopped)

Ingredients :

2 cups mixed vegetables ( cubed )
1/2 cup tuvar dal/pigeon peas
small gooseberry size tamarind ( soak in warm water and extract juice)
1/4 teaspoon turmeric powder
1 and 1/2 teaspoon sambar powder
salt to taste

To roast and grind :

1 teaspoon channa dal/bengal gram
1 teaspoon dhaniya seeds/coriander seeds
2 dry red chillies ( I used Salem gundu milagai)
1/4 cup fresh coconut ( grated)

For tempering :

2 teaspoons  sesame oil
pinch of asafoetida (I use powdered fresh compound asafoetida )
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal/split and husked black gram
1 sprig curry leaves ( roughly torn)

Method :

1. Boil the tuvar dal with adequate water and turmeric and set it aside.

Chef tip : You can use a hand whisk and mash the dal .
2. Heat a small pan/kadai with oil and roast the ingredients for grinding till they turn fragrant.

3. Grind them without adding water and set it aside.
4. Heat a kadai or a heavy bottom vessel with 1 teaspoon of sesame oil and add all the chopped vegetables.

Chef tip : You can use also use a  pressure cooker .
5. Fry the vegetables for 3-4 minutes and add the extracted tamarind juice .

6. Add 1 cup of water, add salt  and allow the vegetables to cook .
Chef tip : The vegetables need to be firm and should not be mushy. If pressure cooking, cook upto one whistle.
7. Now add the sambar powder and the ground fresh powder and mix well.

8. Add the cooked tuvar dal and adjust water levels.
Chef tip : This sambar is little thicker than the regular sambar.
9. Allow the sambar to simmer for another 6-7 minutes and switch off.
10. Heat an iron ladle and temper with ingredients given for the same and pour it over the sambar.

Your delicious Kalyana Kadamba Sambar is ready to be served for lunch or dinner.
