Hi Supermoms,
Little Millet/Samak Chawal/Sama/ Samai is used more extensively during the Navratras. This millet is easy to cook and can be made into a savoury or sweet dish within minutes.
When you think of vadam/crisps or papad, we usually prefer to buy the sun dried ones from store. I know that many of you do not have time to spend loads of time in the kitchen and would like to cook smart.
I have created this recipe especially for all of you who like to eat healthy diet snacks . The crisps do not require any sun drying. Also, you can cook the millets in a microwave and then bake them. Basically, you need not spend hours in the kitchen making these crisps.
You can enjoy these crisps along with your meal or as a 4pm snack along with tea. You can store them in an air tight container for upto a week.
Baked Little Millet Crisps :
Preparation time : 5 minutes
Cooking time : 1 hour & 15 minutes
1 cup = 250 ml cup
Special equipment : Murukku/chakli press
Ingredients :
1/2 cup little millets/samak chawal/sama/samai
2 cups water
1/2 teaspoon roasted jeera powder
senda namak/rock salt to taste
1 tablespoon groundnut oil
Method :
1. Wash the little millet twice and add 2 cups of water .
2. Microwave the millets for 18-19 minutes.
Chef tip : You can also pressure cook for upto 3-4 whistles. Once cooked the millets will increase in volume.
3. Add jeera powder, salt and mash using a ladle.
4. Once the millet dough is warm enough to touch, add oil and knead to a smooth dough.
5. Divide the dough into smaller portions and fill the murukku press with the dough.
Chef tip : I used the thin line nozzle attachment/blade ( that we use for ribbon pakoda) .
6. Line a baking tray with butter paper or parchment paper and using the Murukku /chakli press , spread the millet crisp dough.
7. Pre-heat the oven at 200 degrees C for 10 minutes.
8. Bake them at 200 degrees C for 20 minutes and then reduce the temperature to 180 degrees C and bake them for another 12-15 minutes.
9. Allow the baked little millet crisps to cool in the tray itself and store them in an airtight, odour free, clean container.
Alternatively, you can heat oil and when the oil is hot, deep fry them.
Note : The oil might splutter. So observe caution while deep frying.
The baked crisps tasted more delicious. Healthy baked little millet crisps are now ready .
