Kuttu Lauki Vada | Buckwheat Bottle Gourd Fritters

Kuttu or the buckwheat flour is used a lot during the Navratras (The Nine Day Indian Festival during which many people especially in North India take up fasting). From puri to parathas , pakodas to halwa, the flour can be used to make sweet and savoury dishes. The colour of the flour is not so appetising to many ( just like finger millets/ragi). But, this flour is gluten free and is good for health. 

I made a quick snack using the kuttu flour. The Vada batter has kuttu flour, bottle gourd and spices. Deep fried, these can be made within few minutes. If you have the time, you can also shallow fry or bake the vada. 

These vadas taste best when served hot. If you are on a Navratra fasting diet, you can serve this vada with farali green chutney or coconut chutney. They taste so good. 

These vadas can be great as after school snacks too. 

Kuttu Lauki Vada | Buckwheat Bottle Gourd Fritters :

Preparation time : 10 minutes
Cooking time : 20 minutes
Serves : 4
1 cup = 250 ml cup

Ingredients :

1 cup buckwheat flour /kuttu atta
1 cup bottle gourd ( peeled and grated , with juice)
1-2 green chillies ( finely chopped)( adjust chillies according to heat of chillies)
1/2 teaspoon roasted cumin seeds powder/jeera powder 
rock salt/senda namak  to taste
ground nut oil to deep fry  

Method :

1. Add all the ingredients into a wide bowl.
Chef tip : No need to add extra water. The juice of bottle gourd will be enough to make a stiff and sticky vada batter. Add more buck wheat flour if the vada batter is too loose. 

2. Heat a kadai/heavy bottom pan with oil .
3. Once the oil is hot, pinch a portion of the vada batter and pat it on a greased banana leaf. 
Chef tip : You can cut a small portion of banana leaf and grease with ground nut oil so that it is easy to shape and slide the vada into oil. If you do not have banana leaf , you can use the bottom of a greased stainless steel cup or butter paper. 
4. Once the oil is hot, deep fry the vadas. 
5. Once they are fried on both sides uniformly, drain them in a paper towel. 

Your delicious and Navratra Special Kuttu Vada is now ready to be served with your choice of chutney.
