I know that many of us are going through a phase of ‘cooking fatigue’. Cooking three times a day, continuously without a break is not an easy task. Also ordering outside food is not an easy decision like the good old days. What’s the way out? Well, I for one have done few ready-mix condiments which have made my life easier. I have done:
- Magic curry powder that helps me turn any vegetable in to a vegetable rice.
- Instant dal powder that helps me make Dal Tadka or Dal Fry or Andhra Pappu in minutes
- Different types of Thokkus (Relishes) that can be mixed with hot rice and enjoyed.
- Different pickles to pep me up on a mundane day.
- Finally - making one pot dishes like Vegetable Biryani, Bisi Bele Bath, One Pot Rajma etc. which have been ‘Life-savers’.

Today, I am sharing one more such ready-mix recipe that can be used to spice up any dry curry/vegetable or can be used to flavour multiple dishes, the Sabzi Masala. This time saver recipe is also a very healthy one. You can enjoy the goodness of dal/lentil/protein along with your favourite vegetables and create yummy lunch in minutes.
Before I share the steps, I must thank my dear SIL , Akhila for this simple yet very handy recipe. This is yet another recipe that comes from a proven home chef, tried and tested in their kitchen for decades.
So, make a batch of this powder without delay and beat the blues over the next few weeks. Lets start…
Sabzi Masala Powder :

Preparation time: 5 minutes
Cooking time :15 minutes
1 cup = 250 ml cup
Storage : Stays good for 3-4 months when stored in an odour free, dry, clean airtight bottle.
Masterchefmom tips : You can also add 1 teaspoon sesame seeds, flax seeds and/or melon seeds after dry roasting them.
Ingredients
3 cups coriander seeds
1 cup urad dal/husked black gram
1 cup channa dal/Bengal gram
15-20 dry red chillies (adjust according to the heat of the chillies)
1/4 teaspoon rock salt

Method :
- Dry roast each ingredient separately.
- Grind to a fine powder.
- Transfer it to a wide bowl and allow it to cool down completely.
- Bottle the sabzi powder and use a clean, dry spoon every time you use the powder.
Your delicious Sabzi Masala powder is now ready to be stored.
