Black Carrot Puttu | Guilt Free Dessert | Gluten Free and Vegan Dessert | Masterchefmom Special Recipe


Hi Supermoms,

Have you tasted black carrots? 

Some of you might not have heard about this variety of carrot. If you are living in North India, you would have had the opportunity to cook this vegetable or even taste 'Kanji', a pro-biotic drink that is made from this variety of carrots. Yes, the black carrots are available in plenty here especially during the winter months till spring season. 

Though we call it black carrot, once you peel the carrot, they have a brilliant purple colour. They taste sweet like beetroot but have a slight spicy after taste. Quite unique and refreshing. They also have so much of health benefits. 

I had one black carrot staring at me in my refrigerator and I wanted to make a dessert with it. You all know that my better half, Raghu and my children have a sweet tooth and I try my level best to make desserts healthy. I try and add vegetables and fruits as much as possible in the desserts. Sweet Potato Halwa is one dessert that I make very frequently. 

Coming to today's recipe, I wanted to make a guilt free( oil/ghee/refined sugar free) dessert that can also be put together in just 15 minutes. 

I sliced the carrots thin like small strips so that they cook fast and is also soft to eat. Cardamon, jaggery and coconut came together beautifully and made this a super tasty dish.

The dessert was a big hit and I call it the 'BLACK CARROT PUTTU'.

For those of you who do not get this variety of carrot, you can try it with beetroot or regular carrots.

Black Carrot Puttu By Masterchefmom

Preparation time: 5 minutes

Cooking time : 15 minutes

Serves:2

1 cup = 250 ml cup

Note: You can grease your hand with oil before you peel and slice the carrots as they tend to stain. 

Ingredients :

1 large black carrot

1/4 cup coconut(freshly grated)+ extra for garnish

1/4 tsp cardamom ( adjust to taste)

1 teaspoon jaggery powder ( you can also use palm jaggery or brown sugar)

1 teaspoon finely chopped pistachios ( you can also add roasted nuts of your choice)


Method:

1. Peel the carrot and using a slicer, thinly slice the carrot into long strips. Cut the long slices into thin strips. 

2. Add this to a bowl and place it inside a steamer and steam the carrots for 15 minutes or till they are cooked and soft.

3. Remove the bowl from the steamer, add grated coconut, cardamom powder, jaggery and mix well.

4. Garnish with more grated coconut and pistachios.


Your delicious black carrot puttu can be served warm or chilled.
