I felt so happy finding Chow Chow/Chayote Squash in our near vegetable market. Though it is ubiquitous in South India, it is not so easily available here. So, when I got this vegetable home, I was so excited to make a kootu .
Kootu is part of my weekly cooking. There are plenty of kootu recipes that I have shared earlier. You can check them out to try different varieties.

Today's recipe is a simple yet flavourful one . It is so quick to make as I used the pressure cooker. You can also use the electric cooker which is becoming popular nowadays. This Kootu can be made using just a handful of ingredients . It goes well with as an accompaniment to both rice and rotis.
A recipe that will handy for any week day lunch or dinner.
Chow Chow Kootu Recipe :
Preparation time : 10 minutes
Cooking time : 15 minutes
Serves : 4-6
1 cup = 250 ml cup
Ingredients ;
2 medium size Chayote squash ( peeled and chopped roughly into 1 " cubes)
1/2 cup moong dal/ husked and split green gram ( washed twice)
1/8 teaspoon fenugreek seeds (add along with dal)
1/8 teaspoon turmeric powder
salt to taste
To grind :
1/4 cup fresh coconut pieces
3/4 teaspoon black peppercorns
3/4 teaspoon cumin seeds/jeera
2 teaspoons roasted gram/chutney dal
1/2-1 green chilli ( optional)
To temper:
2 teaspoons coconut oil ( or oil of your choice)
1/4 teaspoon channa dal/ Bengal gram ( optional)
1/4 teaspoon urad dal /husked and split black gram ( optional)
1/4 teaspoon mustard seeds
pinch of asafoetida
1 sprig curry leaves
Method :
1. Soak the ingredients given under 'to grind ' in 1/4 cup water for 10 minutes
2. Grind it to a smooth paste .
Chef tip : You can add 1/4 cup more water while grinding. The mixture need not be thick.
3. Heat a pressure cooker with oil and temper with ingredients given under 'To temper'.
Chef tip : I used a 3.5 litre pressure cooker.
4. Once tempered, add the chayote squash, turmeric powder, salt and mix well.
5. Now, add the washed dal and fenugreek seeds .
6. Add 2 cups of water ( add another 1/2 cup if required) .
7. Add the ground spice and stir the mixture .
8. Cover and pressure cook over medium flame for upto 3 whistles and switch off.
Your simple and delicious Chow Chow Kootu is now ready ! You can try this kootu recipe with cucumber, zucchini, snake gourd and cabbage. They taste so good.
