 Beetroot Pachadi Recipe

Hi Supermoms,

It is so good to include a mix of vegetables in our daily menu. One easy way is to make a raw/steamed vegetable salad or raita . In South Indian States, we call the curd based salad as Thayir Pachadi or Kichadi. In Andhra Pradesh, Pachadi also means a relish or chutney . Today, I am going to share a quick beetroot curd pachadi recipe. It adds so much of colour and variety to the meal that you cook . It does not take too much time or effort. Just steam the beetroot and add it to curd . Temper with spices . That's it. 

Your simple and healthy pachadi will be ready !

If you have fresh grated coconut in stock, you can always add it to the pachadi . You can also add more grated vegetables like carrot or cucumber along with it. 

I have kept it simple and I can honestly tell you that simple dishes turn out the most tasty 😋.

This pachadi can be a part of any meal. They can be served as a first course in a 'Thali meal' or can be served as a side dish to variety rice, rotis/chapatti and any tiffin. 

 Beetroot Pachadi Recipe

Beetroot Pachadi Recipe :

Preparation time : 5 minutes
Cooking time : 10-12 minutes
Serves: 4
1 cup = 250 ml cup 

Ingredients :

1 medium size beetroot ( peeled and grated)
1/2 cup thick curd ( whisked without lumps)
1/4 cup water ( adjust)
1 tablespoon coconut ( optional, I did not add)
salt to taste

For tempering :

1-2 teaspoons coconut oil 
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seeds ( optional)
1/8 teaspoon urad dal /husked and split black gram
1 green chilli ( finely chopped) 
3-4 curry leaves ( torn roughly)

Method :

1. Steam cook the grated beetroot.


2. Once the beetroot has cooled, add the whisked curd ,salt and mix well.
3. Add water depending upon the consistency of the pachadi you prefer.
4. Once you have mixed well, heat an iron ladle or small pan with oil.
5. Temper with ingredients given for the same and pour it over the beetroot curd mixture. 

Your simple and delicious pachadi is now ready to be enjoyed.

 Beetroot Pachadi Recipe

Chef tips : 

1. You can adjust the spice levels according to taste. 
2. If you are adding coconut, mix the grated coconut along with steamed beetroot and then add the curd.
3. Adjust water quantity depending upon the way you are going to serve this pachadi. For rice, the pachadi can be thick. For rotis, you can add more water.
