I use a lot of Black Eyed Peas/Cow Peas/Karamani in my cooking. We all know that legumes are healthy proteins but the main reason I like cowpeas is because, it is so easy to cook. You need not soak them for a long time. You can add them to hot water and allow it to soak for an hour and then cook /steam it.
If you want, you can pressure cook them upto three whistles or can even steam them till they are cooked. Make sure that the cow peas does not get mashed. I have earlier shared the traditional Kosumalli recipe using carrots. In today's recipe, the main ingredient is the cowpeas.
You can enjoy this dish as an evening snack or serve it as a starter. You can also serve it along with your lunch. It tastes great with rotis or rice. There is hardly any use of oil and you can add your choice of fresh vegetables and herbs. I only had carrots at home and some dried kasuri methi leaves/fenugreek leaves. So, added them for flavour. You can also add fresh coconut if you like. This is a simple, everyday recipe that I make at home. On request of my readers of @masterchefmom, I am sharing this recipe here. Do try and you will be amazed by the taste.
Finely chopped cucumber, tomatoes and chopped onions will add more taste to this salad. If you already have boiled cowpeas in your refrigerator, then you can make this recipe in less than 15 minutes. You can also add a handful of poha/beaten rice and make it a tiffin / small meal .
Easy to pack for school/office lunch box too.
Karamani Kosumalli :
Preparation time : 1 hour
Cooking time : 30 minutes
Serves: 4
1 cup = 250 ml cup
Ingredients :
2 cup lobia/black eyed peas ( cooked)
1/8 teaspoon turmeric powder
salt to taste
For tempering :
1 teaspoon coconut oil
1/2 teaspoon cumin seeds
1-2 green chillies ( chopped)
For garnish :
1 carrot ( grated)
1/4 teaspoon dry ginger powder
1-2 teaspoons lemon juice ( freshly squeezed)
Mint/cilantro/dry methi leaves ( quantity as per taste)
Method :
1. Heat a pan with oil and temper with ingredients given for the same.
2. Add the boiled cow peas.
3. Add salt, turmeric powder, mix well and switch off.
4. Add carrots , dry ginger powder, lemon juice and herbs.
5. Mix well and your Karamani Kosumalli is ready !
